A spin-off of the American Lager Style, Cream Ales became popular during prohibition when many Canadian brewers began to produce and refine the style. Once prohibition ended it began to brewed with gusto on both sides of the border. The Cream Ale is another example of a Lagered Ale, in that it uses ale yeast to begin primary fermentation and is then is stored at cooler temperatures for several weeks to increase attenuation and create a cleaner flavor.
